PANDAN CHIFFON CUPCAKES

# PANDAN CHIFFON CUPCAKES
(Recipe for 8 big cupcakes)

60 g egg yolks蛋黄
25 g castor sugar幼糖
50 g corn oil玉米油
50 g young, light green pandan leaves班兰叶
rinse thoroughly and drain; chop roughly
75 g undiluted fresh coconut milk椰浆
blend with chopped pandan leaves; press with potato ricer to yield 65 g green milk; discard pandan pulp
1/8 tsp salt盐
80 g cake flour低筋面粉
¼ tsp baking powder发酵粉
sift with cake flour

150 g egg whites蛋白
60 g castor sugar幼糖



1。PANDAN LEAVES + coconut milk =  make green milk
2. egg yolks + sugar beat till mix, then add oil, mix it, then add pandan milk + salt, mix it, till combined. then add the flour mix. mix it till combined.
3. beat the egg whites + sugar till ok
then mix with the egg yolk
放去容器后敲它
